This week is obviously brought to you by the letter V.

The Veggies

A few years ago I started using Hello Fresh and I was always so amazed at how easy it was to make simple vegetables the star of my dinner plate.

Roasted Veggies : Carrots and Brussels

FFWD to the last 6 months when I started putting a lot more focus on using foods to heal and guess what -- that takes a lot of vegetables.

I started experimenting with different combinations of both seasonings and vegetables and learned you pretty much cannot go wrong so long as you don’t over cook them.

Stop boiling your veggies to death and you won’t need to cover them with butter or cheese. - Me

Give it a try and let me know how it works for you, and if you have a tasty recipe leave it below and I'll give it a try!

The Vices

I'm discovering - a mere 20ish days into 2021 -- that the habits I'd like to change usually involve my vices. Whether I’m eating my feelings, shopping my way out of boredom, or dousing away the stress of the day with a glass of pinot noir, the root of my escape is usually an emotion I‘d rather not deal with.

One of my personal journeys for 2021, is really leaning into how emotional health can directly influence how the rest of our body feels and functions. Bottom line, when we are in emotional distress, it lowers our overall quality of life and how we feel day-to-day. So in addition to eating clean I rely a lot on essential oils. For a quick down and dirty, check out this page to learn about 10 essential oils that can be used for emotional health.

That's it for this week.
